St. Maarten/St. Martin may be a small island in the Caribbean, but as you get to know her you'll find that she's capable of showing you something we all seek: the beauty of life.

The island's soul was born from the people and cultures that have arrived at her shores over the years. The best way to get to know her is to sample her food.

Local chefs, who have come under her spell, have applied their creativity, passion and tradition to their craft. In doing so, they have created an epicurean paradise for tourists and locals alike. Chefs infuse classic dishes with Caribbean spices, fruits and vegetables, creating one-of-a-kind dishes found no place else.

In one week you can sample some of the world's best cuisines from France, Italy, Spain, Thailand, the Netherlands, Japan and, of course, the Caribbean. There are also a number of popular fast-food chains but the local equivalents are even better. The famous "lolos" of Grand Case are small roadside restaurants offering grilled meats, fish, and locally prepared side dishes at reasonable prices.

There are well over 300 restaurants to choose from, so let go of the routine, open your mind and try some of the exotic creations local chefs have prepared just for you. Your five-sense tour of the "Gastronomic Capital of the Caribbean" begins here.

Cupecoy

BLISS
Bliss is an experience that should not be missed. The stylish, open-air dining room is filled with private plush booths overlooking the pool and ocean. You can enjoy their international menu at lunch by sampling their salads, gourmet sandwiches or steaks, or choose from their menu of carpaccios and tartares. Dinner is equally exotic with ravioli filled with foie gras and celery with a Granny Smith apple emulsion, a large selection of sushi platters or their tandoori marinated monkfish. At night Bliss is part lounge and part nightclub where you can mingle with a hip crowd while listening to great music from all over the world. A DJ spins regularly, filling the two bars and open-air dance floor. If you don't feel like dancing you can always take a dip in their pool. Make sure to call ahead to reserve a private cabana by the pool or one of the VIP tables around the dance floor. Bliss is located inside the Caravanserai Beach Resort in Maho.

THE ESPRESSO COFFEE HOUSE
Ease into your day with a newspaper, some fresh baked bread and a steeping hot cappuccino. This café has a modern décor with soft lighting and a counter full of tasty treats. If you are heading to the beach for a picnic, stop in for a fresh salad or a sandwich. They are located next to the American University of the Caribbean and open Monday through Saturday from 7 a.m. to 8 p.m.

RARE
This gem is the first and only restaurant in the Caribbean to serve dry-aged Certified Angus Prime Beef®. Time-honored steakhouse traditions and unique food styling are the cornerstones from which this avant-garde menu was created. The décor blends futurism with retro styling, creating an inviting and dynamic setting. Start with the crispy tempura shrimp cocktail with wakame and coconut curry. For your entrée, you can choose from an impressive list filled with sultry cuts of steak. The one-of-a-kind "deconstructed porterhouse" is a dry-aged Certified Angus Beef® Kansas City strip steak combined with a wet-aged filet mignon. The steak is taken apart and aged separately because each cut reacts differently to the aging process. You can choose sauces like chimichurri, béarnaise or peppercorn demi-glace to accompany your meat or chop. You can select a number of sides to accompany your meal including Gouda-bacon croquettes, mashed potatoes with truffles, creamed spinach au gratin or perfectly cooked grilled asparagus in a sesame-balsamic vinaigrette. The "Adults Only" Chocolate Pudding Napoleon and a glass of port is a perfect way to end this seductive culinary experience. Rare is the sister restaurant of Temptation and is located in the Atlantis World Casino. Free valet parking is available.

Philipsburg

TALOULA MANGO'S
The owners, Su and Norm Wathey, have achieved their goal of opening a "beautiful restaurant on the beach." This open-air restaurant is centrally located on the boardwalk of Great Bay Beach. The menu has something for everyone, including an interesting array of salads, sandwiches, seafood, local specialties and gourmet pizza. Stop in for fried Gouda sticks or shrimp and scallop kebobs with a toasted coconut and spicy chili sauce. An island favorite is the Caribbean conch and dumplings or the sherry-hoisin glazed pork tenderloin with a tomato-red onion salsa, fried plantains and stir-fried rice noodles. Top off your dinner with hot crepes stuffed with juicy sweet Guadeloupe pineapple and a shot of Guavaberry liqueur. A separate children's menu is also available. All these delights come together to bring a relaxing slice of paradise on the beach in the heart of downtown Philipsburg.

THE GREENHOUSE
This restaurant combines a relaxed yet lively atmosphere with affordable quality food. The open-air dining room offers a tranquil breeze and a great view of the harbor. You will be tempted by American classics like crispy fried calamari or the conch fritters — a local favorite. Its friendly and attentive staff serves a variety of fresh salads, sandwiches and some of the island's best Angus steaks. The mouthwatering, tender filet mignon is served with a savory peppercorn sauce. The surf and turf special features lobster from the nearby island of Saba. Finish your meal with a refreshing slice of Key lime pie. For a good time, stop in during its extended happy hour for the two-for-one drink specials and discounted appetizers. There is plenty of entertainment including a DJ, bingo, trivia, pool tables and video games. The Greenhouse is located in Bobby's Marina.

HOLLAND HOUSE
Another fine option along Great Bay Beach is the recently renovated Holland House restaurant located within the hotel. The oceanfront dining area is a perfect place for an intimate dining experience. You can stop in to enjoy a wonderful breakfast, a leisurely lunch or a romantic dinner. The à la carte breakfast menu offers a variety of breads, omelets and fresh fish. The lunch menu features delicious sandwiches, salads and specials from the barbecue. It is during dinner that Chef Octave creates his special finger foods. The tapas menu features 20 mouthwatering tapas served either hot or cold. The Dutch beef ragout is rolled in bread crumbs and fried, then served with a tart mustard sauce for dipping. The fiery Indonesian chicken brochettes are accompanied by a rich peanut sauce. The eclectic main courses range from a French-style rack of lamb marinated with fresh herbs and cooked tender, to a local-style West Indian fish pot with curry and coconut or lobster prepared any way you like. A simple homemade rum cake makes a perfect ending to a delightful evening.

Simpson Bay

BOATHOUSE RESTAURANT AND BAR
Boathouse has been around for nearly 20 years and is practically an island institution. It is a funky, friendly place to enjoy an international menu. The nautical décor is quite fitting, since the restaurant has been built right over the water. The value-packed menu offers a tempting selection of wraps, salads, pastas, seafood and steak. Entrées include a succulent shrimp kebab, luscious scallops Madagascar or a juicy filet mignon. The wine menu has interesting choices from around the world. The wraparound bar attracts good-natured expatriates and locals alike. It is a happening place to enjoy live music on Friday nights. You will know you have reached Boathouse when you see the boat in the courtyard on Airport Road across from the cinema.

JIMBO'S ROCK & BLUES CAFÉ
Jimbo's is a rock and blues café serving Tex-Mex food with flavors from the Caribbean, Texas and the Southwest. The open-air dining room cozies up to a beautiful swim-up bar with waterfalls and lush tropical greenery. Start with their famous chili con carne served with homemade jalapeño cornbread or try one of their gourmet salads. If you are in the mood for something heartier, you have a choice between mesquite-grilled burgers, classic and inventive burritos, enchiladas, sizzling fajitas and plenty of vegetarian dishes. Finish your meal with Caribbean-style fried ice cream garnished with passion fruit. Get your groove on by sipping a 32-oz. margarita or jumping in the pool while listening to classic rock and roll or blues. They are open seven days a week for lunch, happy hour and dinner. After five years and lots of begging, Jimbo's is finally open on Sundays! From 11 a.m. to 3:30 p.m., Jimbo's serves up a classic Sunday brunch-style fare, with a hint of South of the border flavor and a beach party atmosphere. Fixed menu is $15 per person - one drink and one plate stacked as high as you can go, or $30 per person - everything on the menu - all day, as much as you can eat and drink! Come early and bring your bathing suit! Jimbo's Rock and Blues Café is located on Airport Road next to the Simpson Bay Yacht Club Marina.

VALENTINO'S ITALIAN BISTRO
Homemade Italian food, sepia photos, songs to sing to and fragrant aromas from the kitchen make Valentino's an experience to savor. This intimate bistro serves authentic homemade pasta, gourmet pizza and Italian specialties. You will find locally grown tomatoes in the Caprese salad of buffalo mozzarella and basil with a spicy vinaigrette. The appetizer of cured beef tenderloin is served with a Tuscan olive oil, lemon, pine nuts, celery and Parmesan cheese. They serve classic pastas as well as homemade ravioli filled with veal sweetbreads and lobster in a lemon sauce. The veal ossobucco with saffron risotto and roasted vegetables is a dish to behold. Their extensive wine list has been hand picked in order to complement the chef's menu. Don't miss the refreshing pineapple and mint salad with coconut ice cream and a dash of rum. Valentino's is open for dinner and is located in the Simpson Bay Marina.

RISTORANTE LAGUNA
Owners Franco Patane and Giani Tirocchi have been serving their authentic regional Italian cuisine since Laguna's opening in 1991. As you descend into the sunken dining room, you will walk into a spacious room filled with lush greenery and wall-to-wall windows. French doors lead to an outdoor terrace overlooking the shimmering lagoon. In the background, classical Italian music creates a soothing ambience. The attentive staff will present you with a menu of divine pastas like the remarkably creamy fettuccine Alfredo or tender calamari with angel hair pasta. Surf and turf lovers will marvel at their juicy USDA-approved Prime steaks, fresh fish, local lobster and regional specialties. Each entrée is accompanied by ingredients imported directly from Italy and cooked to perfection. Laguna is located on Simpson Bay Lagoon across from the Princess Juliana International Airport and is open from 6 p.m. to 10:30 p.m. for dinner.

ZEE BEST
This café is reminiscent of an outdoor Parisian café. They are famous for their fresh, warm baked pastries. Their large breakfast menu includes more than 20 varieties of pastries, including golden buttery croissants, chocolate croissants, almond croissants and brioche - all baked on the premises. They also serve fluffy omelets and quiche, but the real pièce de résistance is their sweet or savory crepes. A cup of espresso or a piping hot cappuccino made from a fine French roast will put a spring in your step. If you prefer to ease into your day, you can choose from a large assortment of herbal teas and fresh-squeezed juices. The friendly staff will make you feel right at home. Both the locals and vacationers have come to favor this spot for breakfast and lunch. If you are a late riser, it's always good to know that you can order breakfast until 2 p.m. The lunch menu features burgers, salads, sandwiches and their infamous Maria's Spaghetti Bolognaise. Zee Best is located at the Simpson Bay Yacht Club, with a second location in Marigot at the Marina Royale and a third at Port de Plaisance.

BLUEBEARD CHARTERS
Bluebeard Charters offer day sail trips to Anguilla and Prickly Pear on their spacious and fully-stocked catamaran called the Heineken Cat. During the voyage you can soak up the sun and sip some rum punch while nibbling on Dutch Gouda cheese and fresh-baked French bread. You will be pleasantly surprised to find yourself in the midst of the some of the best snorkeling in the Caribbean. By the time you get out of the water, you will be ready for the hearty West Indian lunch prepared just for you. If your destination is Anguilla you will have a buffet lunch on the beautiful long white, sandy beach of Shoay Bay. The barbecue chicken and baby back pork ribs are smothered in a peppery barbecue sauce and served with crispy french fries, rice cooked with lentils and coleslaw. If you are heading to Prickly Pear, your lunch of barbecue chicken, baby back ribs, mahimahi or a vegetarian dish will be served hot off the drum. The traditional West Indian rice and peas, home-fried potatoes, coleslaw and salad will accompany your meal. The Heineken Cat departs from the Lady C Floating Bar dock near the bridge.

CAPPUCCINO
After the restaurants, bars and casinos close, where do people go if they are hungry? The chef and staff at Cappuccino Diner Bar & Restaurant wear several hats. They serve a traditional breakfast of eggs, French toast or pancakes 24 hours a day. For lunch, they serve wings, salads, burgers and pizza. For dinner, they have a menu full of tasty dishes including salads, pastas, grilled ribs, a juicy filet mignon, grilled mahimahi or lobster, just to name a few. Cappuccino Diner has a friendly and attentive staff, a full bar and two large screen TVs. Stop by any time of the day or night for a bite to eat, a drink or to watch the game. Cappuccino is located on the main road to Cole Bay in an open-air building with tables in the dining area and under large umbrellas on an outside terrace.

THE HIDEAWAY
This charming restaurant and bar sits beside an infinity pool overlooking a spectacular view of Saba Island. They pride themselves on offering attentive service complimented by high-quality food. Local Creole dishes and fine international cuisine make up an inspiring menu. This is a perfect spot for cheerful breakfasts, long lazy lunches and romantic dinners. During the evening, the terrace transitions into a candlelit setting overlooking a softly illuminated pool. The snapper, shrimp and scallops ceviche is refreshing and delicious. The fettuccine "Neptune" combines a mix of crab, snapper and shrimp and is tossed in a white wine sauce. The Creole-style conch stew is a unique blend of scallions, green peppers, tomato, garlic and Caribbean spices. Finish your meal with an Amaretto strawberry cheesecake and one of their specialty coffee drinks. Live music accompanies dinner Thursday, Friday and Saturday nights. The Hideaway is located at La Vista Resort on Pelican Key and has plenty of parking.

TANGO CARIBBEAN DINNER CRUISE
Aqua Mania runs two luxurious catamarans, Lambada and Tango, both of which sail at sunset. Departing from Pelican Marina, the 63-foot Tango features a Caribbean Dinner Cruise that takes you on a coastal tour as the sun sets over the horizon. The dress is informal, and guests are invited to enjoy the open bar that is stocked with Champagne, rum punch and a variety of soft drinks. You can nosh on an assortment of cheese, exotic fruits, vegetables, dips and fresh bread as you take in the view. When you return to Simpson Bay, a Creole dinner is served featuring your choice of Creole chicken, baby back ribs, salads, breads, rice and beans and plantains. The buffet style meal can be enjoyed anywhere on the boat, almost like a picnic but minus the interference of ants. As a complement to the delicious dinner, guests can choose dessert or Caribbean rum, or both. Dinner and drinks are followed by dancing - a festive end to a fabulous evening.

LA VERANDA
The ocean views and spectacular sunsets may be the initial draw, but it's their excellent home-style gourmet food that keeps people coming back. The inviting café serves breakfast, lunch, dinner and late night snacks. Breakfast specials include French toast made with homemade egg bread topped with maple syrup or tropical fruit. A wide variety of wraps, pizzas and burgers are available at lunch. One of their signature dinner dishes is the Curaçao-style crab cakes, which burst with flavor. They also serve delicious baked and stuffed Caribbean lobster and juicy Argentine or USDA-approved Prime steaks. Be sure to try one of their sweet treats like the scrumptiously creamy island chocolate cake spiced with cinnamon. They have music nightly and offer WiFi service to patrons. La Veranda Café is open until midnight and can be found on the balcony of the Hollywood Casino at Pelican Resort Club.

Marigot

LA VIE EN ROSE
This renowned island institution has been setting the standard for many newcomers for the past 25 years. The restaurant has been coined "La Grande Dame" of French restaurants. The ambience is intimate and romantic with an elegant décor of candlelit tables evocative of Paris in the 1920s. The food is a mélange of French classics and Caribbean favorites. The menu has so many interesting dishes, you will have a hard time choosing. The sidewalk café offers a delicious mango gazpacho with ginger and fresh mint to start. Move on to the sautéed breast of duck and bay scallops on a bed of greens or the salmon tartare with coconut milk and ginger. Walk upstairs for a romantic dinner of poultry consommé with truffles and foie gras ravioli or the escargots and artichokes wrapped in phyllo pastry with a bacon and mushroom sauce. You will be pleasantly surprised by the lobster and boneless rabbit entrée served in a light honey and vanilla sauce. The wine list has a selection of reasonably priced wines in addition to the French heavyweights. For dessert, opt for the chef's selection, a sampling of his best desserts. La Vie en Rose is located on the Marigot waterfront.

LE SAINT SÉVERIN
Reminiscent of a Southern French bistro, this bustling restaurant is popular with well-respected locals and savvy vacationers alike. You can either sit outside or in the cool air-conditioned dining room. Le Saint Séverin is known for hearty, full-flavored meals at reasonable prices from morning until night. You can start your day with a strong cup of coffee, fresh baked pastries or an omelet. They have regular daily specials, ranging from paella to tender veal in a cream sauce or hearty beef stew. The regular lunch menu features snacks, salads, lunch plates and daily specials listed on a blackboard. Thursday through Saturday, fresh seafood is flown in from France and is featured in specials like the popular Spanish seafood stew that includes lobster, calamari, shrimp, mussels, clams and rockfish with basmati rice. The restaurant is located on the outskirts of Marigot nearest to Cole Bay with plenty of parking.

Grand Case

SPIGA
Enjoy "nouvelle" Italian cuisine in the serene comfort of an authentic Caribbean Creole-style cottage. Spiga's extensive menu uses the highest quality ingredients found locally or imported from Italy. Local fruits and spices are combined with imported specialties, creating a unique spectrum of flavors, colors and textures. You will be treated to delightful homemade pasta, an assortment of extraordinarily tender meat, freshly caught seafood, expertly prepared poultry and vegetarian selections. Treat yourself to an appetizer of homemade lobster ravioli in a lobster-bisque sauce. For something lighter, try the char-grilled filet of beef "carpaccio" thinly sliced and drizzled with white truffle olive oil on a bed of arugula, finished with Parmigiano Reggiano. Eat like a true Italian by choosing a middle course of half-moon raviolis filled with veal in a homemade ragu. Succulent entrées include Caribbean lobster, jumbo shrimp and lump crab meat flambéed in Grand Marnier, fresh tomato and basil. A great way to end your meal is to try the banana and Martinique rum panna cotta with roasted pineapple and caramel sauce. Spiga is one of the last restaurants on the northern end of Boulevard de Grand Case.

L'AUBERGE GOURMANDE
This is one of the premier French restaurants on the island. L'Auberge Gourmande serves fine French cuisine in an intimate dining room in a historic Creole house. You can watch Grand Case come to life on the terrace or step inside to find a discreet alcove. Their list of daily specials always includes at least one vegetarian dish. Start your meal with sautéed shrimp and pineapple served on a bed of mesclun greens tossed with a mango vinaigrette. The Burgundian snails are served in a fragrant garlic butter. The roasted duck breast entrée is served over flambéed pineapple with a sweet and sour sauce. If you favor surf over turf, try the whole grilled Dover sole or the Chilean sea bass and shrimp accompanied by sweet potatoes and roasted vegetables. Your experience will include fine French cuisine complemented by a wide range of vintages at reasonable prices. Enjoy one of the chef's signature desserts while sipping coffee accompanied by a digestif. L'Auberge Gourmande is the sister restaurant of Sunset Café in Grand Case and Le Montmartre in Cupecoy. The restaurant is located in the center of restaurant row in Grand Case.

SUNSET CAFÉ
This open-air café sits on the water overlooking Créole Rock and the bay to Anguilla. No matter where you sit, you can watch and listen to waves crashing against the white sandy beach. In the morning, the restaurant serves classic French breakfasts as well as American favorites. Be forewarned; they have a reputation for serving the best mussels and crispiest fries on the island. Add a bottle of chilled rosé and you've found yourself a slice of heaven. By evening, the café transforms into a romantic candlelit French restaurant overlooking a softly illuminated beach. Begin your meal with the shredded duck egg roll with a tangy dipping sauce or the warm goat cheese salad with asparagus. For a taste of the good life, try their grilled lobster, shrimp Creole and grouper filet combination served in a cream sauce with chives. Another outstanding choice is the rack of lamb with crisp potato slices and mushrooms. For dessert they serve a tempting warm molten chocolate cake with vanilla ice cream. Just buzz the gate at Grand Case Beach Club and drive right into their secure parking lot. Sunset Café is the sister restaurant of L'Auberge Gourmande in Grand Case and Le Montmartre in Cupecoy.
